Clearview News:

The Town of Clearview will be sponsoring a community holiday dinner on December 15th at 5:00 pm. at the Clearview Main Street Community Building at no cost to the public. All are welcome to attend. Ted Jackson is now home after spending a week in Hillcrest South Hospital. He is doing better but will need future testing and treatment. Please continue your prayers for those on our sick list: Ted Jackson, Cinderella Watson, Clifford Normore, Billy Walker, L.C. and Irene Carson, Sharon Patton, Laura Beavers, Dorothy Loggins, Marjorie Plunkett, Ethelene Scott, Kurrilue Johnson, Earnest Hamilton, and Johnny West.

Peanut Brittle Recipe

2 cups salted roasted peanuts (12 ox.) can 1 cup light corn syrup ½ cup water ½ cup (1 stick) butter or margarine 1-pound golden brown sugar (2 1/3 cups packed) 1 teaspoon vanilla 2 teaspoon baking soda Spread peanuts in a shallow pan and place in a 200-degree oven. Combine water, sugar, syrup, and butter in a 3-quart heavy saucepan. Place over high heat; stir constantly until boiling. Place thermometer in mixture and continue cooking to degrees (hard-crack stage). Stir often to prevent burning. Remove from heat; stir in vanilla and hot peanuts. Add soda and stir until foamy. Quickly pour into two greased cookie sheets. Spread as thin as possible. As soon as brittle begins to set, flip over on board, and pull as thin as possible. Cool. Break into pieces. Makes 2 ½ pounds.
